I don't really see why a prof would be tanking PvM unless to help someone level, Then you could just stone curse/safety wall...

A prof is one of the best mob tankers, marry it with a soul linker so it can use the kaahi and others on you.

I would have a CK Handy for any demi human. Feather Beret or any other headgear not AoA. Use a dex weapon/switch CK. Have Green Ferus Card in your shoes, HP Bonus +1 Vit is nice. If you can get your hands on Orlean's Plate more DEF and less weight, also if you can get Orleans Gloves. Get a Marc Card for the armor, keep ED just incase your dealing with a stone curse or poison attack.

I would say keep the 99 dex, take VIT to be 100 over all(cant be stunned etc). Pump some strength to be able to carry some more weight, and increase int as well Profs still need some sp xD.

Personally I like the idea of using a Fortune Sword for the perfect dodge a little more than the Dex and HP.  Since you're going to use a Stone Buckler, why not spring for the entire set [Stone Buckler, Magni's Cap, Odin's Blessing]?  If not, I would suggest using a higher DEF headgear.  If you need the reduction, pick a headgear with a slot and choose the appropriate elemental resist card.  Wool Scarf can be switched out to Diabolus Manteau if the MDEF is not needed. Matyr should most likely be switched out for a Green Ferus Card in the footgear.  If you're looking for pot efficiency, don't be afraid to slap on some Fricco's Shoes to see how they effect it.  Safety Rings or Vesper Cores would be a good addition because of the minor DEF and MDef.

The combo only applies to Swordsman class, and right now my knight has a wooping 80 hard def :3

If you have Variants available, they and survivor combo would be the best, otherwise, I'd stick to Wool+Tidals, and probably that Fortune Sword. As armor, I'd choose to do a lot of farming and get +9/+10 silk robe. Seems strange, but you'll need some mdef too. Armor cards...Marc is a basic thing, you will need it agaisnt a lot of monsters. I don't recommend ED for tanking, you can't take heals and minimal number of monsters use Stone Curse. You can also pack Dark Frame, Sasquatch or Demon Pungus cards, tanking MvPs is always a lot easier with most of their mob incapacitated.
Best tanking headgear is definitely highly refined Goibne, although you look like...ehm...well, if you don't care about freeze/stone curse, you can use whole set. The hp bonus and defense is indeed good.
Since you are a tank, accessories should be safety rings or, you can take an alternative approach...99 base vit, split the rest between int and dex, get two diablos rings, one with Vitata card and heal yourself. The other card should be something defensive...alligator, Spore, or if you fancy a bit extraordinary approach, Owl Baron if you can get it (autocasts Lex Aeterna on enemy when taking physical damage).
Shield...Stone Buck is good against MvPs, sicne most of them are large. Race mods and Alice card are good, just be careful with alice, as you take more damage from non-boss monsters.
