Most of servers implement @autotrade/@at command to do just that.

As Sarin said most servers have @autotrade (@at) enabled.  This command may only be available for use in limited places on your server, you will need to find out from the specific server you are on where you can and cannot use it.

To use this command you need to be on a merchant class character, with a cart.
Place items you want to sell in the cart.
Use your vend skill, and set up your store as normal.
Once store is set up and vending type @autotrade / @at
This will log you out of that account and leave the character vending while you are off line.

Remember, if you log into that account you will kick that vendor off line.

Erm, pretty much something like a control panel. A player logs into his account, selects certain items from his cart to be vended for a certain price and can vend them like that. It'd be quite complicated to make, most likely.
